So last week's meals went really well. It was nice to know what we were going to have every night. This week I was able to get all of the stuff for our meals for under $20 (I already had some stuff at home). This week's menu is:
* Chicken/bean burritos (frozen ones from Trader Joe's) and rice * Stromboli (I'm making the crust in the breadmaker)...thanks for the idea, Jess! * Chicken tortilla soup
Hey Jess...Hope the Stromboli turns out. I thought of another meal we used to make. Not sure if you like Ramen noodles - I'm not a fan - but the noodles are quick and CHEAP! So we would buy a bag of frozen veggies and cook up the noodles with some veggies and add Thai Peanut sauce - instant Pad Thai! (We didn't use the seasoning from the Ramen because it was too salty for us.) Also, my family always shopped at Aldi's growing up and when my mom wanted to cook a pie or dessert with fruit, she'd find the "not so good looking" fruit and ask for a discount. Often at a place like Aldi's they'd rather give you a bit of a discount as these foods will probably not sell and they'll just have to give them away or throw them away. And, these fruits are great to cook with - you'll never know the difference once they're all baked up!
Just some ideas to pass along....I miss cooking - it's very difficult to cook here in Taiwan and what little I can do consists of a hot plate, toaster oven, and microwave!
Thanks Jess! The stromboli was INCREDIBLE! I made the crust from scratch with a mixture of white and wheat flour. I wasn't sure what to put in it so we just did mozerella cheese, marinara sauce, pepperoni and red and yellow peppers. Thanks for the ideas! I'll have to try that out.
